It’s Friday, I’m in love…

On to module 3 and we actually started preparing composed meals with cohesive courses, and started talking about plate design. We had a rather intense 3-course meal before 11:30am that I would have happily paid $80 for in a restaurant. Consequently, I told that to my 3 table mates today and they helpfully suggested I could give them each  20 bucks.

Tuna carpaccio with horseradish mayo, microgreens, and fried capers

Pan seared scallops with parsnip puree, braised cabbage, and pommes gauffrette

Halibut with warm vinaigrette and spring vegetables

And speaking of bucks, I found out yesterday that I was awarded a scholarship for female culinary students by the orgnization Les Dames D’Escoffier of New York, a professional organization for women chefs!

    Wait til you hear what Knoxie and I have dreamed up as your next career adventure. The title will now have to start with “Award-Winning”-people won’t be able to resist..

    On a side note, your first picture reminded me that I’m not allowed to eat undercooked meat products or sprouts of any sort. The other two dishes looked super-yummy!
