Photos May Induce Sugar Coma

Welcome back! Sorry for the hiatus – we were actually off of culinary school last week and though I intended to post about all the fabulous things I was cooking at home – I didn’t. To clarify, I did cook at home (somewhat), but obviously I never posted. Vacation is hard work. Please enjoy a series of photos that details what’s been happening over the past few lessons. You might want to fetch yourself a glass of milk and/or an insulin shot.

    Is that a hydrometer? I have one of those… Mine goes in beer.

      It’s actually a sacchrometer, measuring the sugar density of the solution. Apparently you want 17 – 22 for making sorbet. That’s basil-flavored syrup, by the way, which will get churned into sorbet tomorrow.

      Of the two that I personally made, I gave one to the class across the hall, and brought one into work. After a couple of pastry lessons I know better than to try to bring everything home. Plus my freezer’s full. I’m not so sure the meringue-based buttercream would have held up so well for a cross-country journey.
