Try This At Home…

In the past month I’ve had several opportunities to try my hand at home with the skills I’ve learned at school. Certain friends have requested homemade meals (with demos) and some I’ve offered to cook for, usually to ease the financial burden of going out. I sadly don’t have a lot of pictures to share, but here’s a sampling of some of the menus I’ve done.

For JF who wanted trade secrets:
-Mesclun Salad with Candied Bacon and Poached Egg
-Pan Fried Striped Bass with Sugar Snap Peas, Pureed Celeriac, and Red Pepper Mojo Sauce (I even filleted the whole fish myself at home)
-Poached Pear Tart with Rum Currant Ice Cream

For JH who likes it simple and a little bit veg:
-Goat Cheese and Caramelized Onion Tart with Heirloom Tomato and Basil Salad
-Vanilla Custard with Macerated Herbed Strawberries

For KK who just got off a plane:
-Mesclun with Blueberries, Toasted Almonds, and Bel Paese Cheese
-Pan Fried Chicken Thighs with Roasted Summer Squash and Penne with Sundried Tomato Pesto
-Milk Chocolate Coconut Sundae with Toasted Almonds

Holy crap just writing out the components in a title format makes it all seem way fancier than it probably actually was. I challenge you all to describe your last meal to me as it might appear on a restaurant menu, even it was “Legume Puree with Berry Compote” i.e. Peanut Butter and Jelly.

    Well, in that case I had a zucchini and yellow squash fritatta with herbs picked from the chef’s garden and crumbled grana padano, served with a salad of Windlfower farm lettuce, heirloom grape tomatoes, Madeleine goat cheese and toasted pecans (I cleaned out my fridge but if you knew how long some of those ingredients have been in there it wouldn’t sound so fancy). oh and followed by a frozen strawberry coconut parfait (fro-yo).

    Be Wise Farm Zucchini
    Brown Rice, Black Beans, Cherry Tomatoes
    Fresh Fruit Salad

    I bet your food was adequately fancy.
